Making pemmican is such a pain that when I make it, I make A LOT. so it
often ends up lasting weeks. Would olive oil last that long mixed with
beef? I have no idea. It seems pretty stable in a dark container. But it
moght be different exposed to air.

If it tastes good You eat it more or less immediately...
