He is clearly a neolithic man - not paleolithic.
About 5300 years old - this is well after the beginning
of the neolithic culture in Italy/Austria about 4100bc.
Oetzi had the usual rubbed teeth from constantly eating
grinded grain (whith stone remains from the grinder).
Two grains of Einkorn (triticum monocuccum) were found
hanging in his cloths. He carried two sloe-berries and
some mushrooms.
Neolithic cultures tend to have at least a very big
vegetarian part in their food, because they are settled
and thus have little wildlife resources reachable around.
To sustain one single person by wild game needs
about 10 square-km (3.9 sqare miles) of good territory.

r a village of 500 persons a circle
of about 50 miles diameter.
And for New York City (7.3 million) a circle of 2200 miles diameter.
To "produce" significant amounts of meat by feeding animals
with crops is a luxury which is only possible with mass agriculture
with artificial fertilizer, soil destruction and so on.
Absolutely uneconomical for a neolithical population
having a kind of agriculture we'd call organic today.
These are just some numbers i mention, to gain a little imagination of the
dimensions we talk of, when talking about ways of eating.
Oetzi to be fully vegan is a surprise though, because these neolithics
are known to have had goats, sheeps and cattle and at least were
supposed to have used their milk, meat and a little game (2%).
