My local food co-op has a new pancake mix that is labeled "gluten free"
Ingredients are:
brown rice flour, quinoa flour, amaranth flour, teff flour, potato starch
flour, tapioca flour, arrowroot, rice bran, aluminum free baking powder and
unrefined sea salt.
The company is Fare Thee Well Foods, in Bellingham, WA 360-647-9048
THe mix works out well, even for kitchen-challenged me. SO far, I haven't
had any noticable reaction -- though I am interested in hearing is anyone
has had reactions to amaranth or teff. Thanks.
Fare Thee Well also makes great-tasting GF energy bars made of (among other
things) several types of seeds and GF rice syrup.
