Since learning of my condition less than 2 years ago, I've been
particularly disappointed in the various bread/flour replacements. For
example, I used the Gluten Free Pantry's famous bread mix -- the end result
never even made it into my mouth.
I recently tried two mixes made by Sylvan Border Farms, distributed by
Mendocino Gluten-Free Products, PO Box 277 Willits, CA 95490. 800-297-5399.
One is a brown bread mix, which while not exactly wheat-based pumpernickel,
is actually good. Apparently the flour combination they use, which includes
amaranth and quinoa in addition to the usual culprits, removes the heavy
rice flour smell and after-taste.
The second product is their General Purpose Flour. Yesterday, I baked a
banana bread with it (recipe came in the package) and brought it to a
friend's house. No "fool your friends" here. These guys knew that if I
baked it, it was GF.
Friends, let me tell you. This banana bread was as good or better than any
I ever tasted, and my friends agreed.
I can hardly wait to try this fine flour in other recipes!
