Hello everyone,
 
    I only know that if you want to substitute for ricotta(for lasagna),
you can use  mashed tofu with italian spices (oregano, basil, etc) which
 works well.
   If you find  a hard cheese substitute please let me know!!  I tried
vegan rella, and found after two bites, it was intolerable.  Also soymage
wasn't great either (but it has almost the same nutritional value as milk,
now if it could only taste good )
