I am not Todd but here is a good book for you to read:
'Fats that Heal Fats that Kill' by Udo Erasmus. It goes into a lot of
detail discussing almost everything relating to dietary fats (their
kinds, the need for them, how they are processed, the sources for them,
etc.) It's not a book that requires much background to understand.
The author gets just about everything right, except for the recommendation
to keep the overall fat % down (and eat plenty of complex carbs instead, grrr).
