The "U" means that the product is certified Kosher by the Union of Orthodox
(Jewish) Rabbis. However, that does not mean that it has no milk products! Only
the Pareve sign guarantees that there is no milk product. This topic is clearly
covered in Steve Carper's book, Milk Is Not For Every Body, pp. 173-174.
