I also suffered from a lot of mouth sores and ulcers prior to the celiac
diagnosis. As Bill and Katie said maybe there is a "hidden" gluten
source you are not aware of. Remember in the beginning there is a lot of
information to digest (excuse the pun) and it is easy to miss something.
We all weren't perfect at this in the beginning. It is a learning
process.
You have a lot to manage with type I diabetes and the celiac disease.
My daughter was diagnosed with celiac disease at the age of 10 mos and
diag. with type 1 diabetes at age 7. Ironically, I have a degree in
nutrition, but it is still a lot to manage.
Keep your eye out for a better doctor and hopefully someone will have
some insight into this if you aren't receiving gluten from an unknown
source. I was diagnosed with multiple food allergies, and environmental
allergies prior to the celiac diag. Allergies to other things can
sometimes contribute other physical problems.
