The only reason would be the taste, but that's a subjective thing.
It is quite hard, so it is well suited for pemmican. I tried once but
could not stand the taste (I can't stand beef fat taste either so I
use olive oil for soft pemmican and coconut fat for not so soft p.
One traditional use for lambs (or rather sheeps) fat (tallow) is candles.
