Mary, to stay in ketosis an adult must eat 30g of carb per day,
or less.  It might be different for a child.  If you intend to be
strict about this, you will need to count carbs and buy keto-stix
at the drugstore.  As a general rule, you subtract grams of fiber
from the total carb count.  You'll probably need to get a book
such as Netzer's _Complete Book of Food Counts_.
