I searched the archives to find a gf ricotta cheese. All the brands
mentioned as being definitely gf are brands I am not familiar with
(Frigo, Stella, Maggio and Penn Maid) and I don't think they are
available in the Atlanta area.

This is an except from a post from a couple of months ago:

>>>This is a letter that I received from Patricia A Lombardo, Consumer Affairs
Manager from Sargento Products.

<<<snip>>>
The source of the vinegar in Sargento Ricotta Cheese can vary; it is triple
distilled and to the best of our knowledge, no gluten is present.<<<

This seems a bit vague to me. I was wondering if anyone has tried the
Sargento Ricotta, and what reactions you had.

I should would like to make lasagna without tofu!
