There's great food available for celiacs during Passover.  However, do not
buy anything with matzo meal, cake flour, matzo flour, passover flour.
These are all forms of matzo (which is wheat and water) ground up in
various degrees of fineness.    There are cookies, cakes, candies and other
wonderful products for celiacs, just read every label carefully.  This is a
good time to stock up.  Also after Passover, these foods are often
discounted. You might find a year's supply of potato starch or those great
chocolate macaroons.
