Another view might be found in Budiansky's "Covenant of the Wild: Why
Animals Chose Domestication".  (see NeaderThin bibliography)

This important work discusses why domestic animals have an evolutionary
advantage in being eaten and why humans share similar advantages in
becoming serfs or employees (even I sometimes long for the simple bliss
of a steady paycheck).  The cultural and enviromental effects of this are
also discussed in Paul Shepard's book "The Tender Carnivore and the
Sacred Game".
