Moira,

One can marinate (overnite if possible) in marinade containing vinegar,
onion, garlic, a little oil - then throw away the marinade before cooking,
and pat dry the pieces. Lemon juice may work as well as vinegar, I dont
know.

Also, slicing thin steaks, or chunks, marinating them, and broiling or
grilling is more appetizing to many people.

I pretty much lived on game for some years, and I always preferred small
grilled pieces to large roasts or moist dishes such as stews.

I think most of the gamey taste is due to different structural fats in game
carcasses. Some of these fats become oxidized in the conditions of field
butchering, getting back to the camp or car, satisfying the game department
re: butchering, etc.

A good hot chili can hide a lot, too.
