We use vinegar instead of the lemon juice. Citrus is an allergen for
some, but I just like the recipe I have better than the ones with lemon
(or any of the prepackaged ones). I've known people to substitute peanut
butter for the tahini, providing peanuts aren't a problem. I also put
onion in mine and a little cayenne pepper.
