We use sucanat in place of brown sugar. It has a stronger molasses
flavor than brown sugar, but makes a good substitute.

We've sometimes made our own brown sugar by mixing 1 tablespoon
molasses with 1 cup of granulated sugar. It takes a while to mix in,
so I would add the sugar to the dry ingredients and add the molasses
to the wet ingredients to save time and effort.
