My kids react within hours, if they eat something a t lunch a t school (
as happened today!)  I usually can see it in their faces (dark circles,
beady eyes) when they come home and the weepies and jitters usually come
along shortly thereafter.   But the symptoms can last for days and the
bedwetting only happens four days after gluten ingestion for my son.
Other symptoms usually follow.
