Hi everyone,

Recently Sharon from Kansas posted a recipe for pancakes which I decided
to try this morning for breakfast.

I made a few alterations to the recipe due to lack of ingredients and as
the pancakes turned out wonderful I thought I'd share my adventure.

I discovered that I did not have enough rice flour (about 3/4 cup I
think)so I added two tablespoons of soya flour, 1 tablespoon of ground
tapioca and made it up to the required 1 1/4 cups with potato starch.

As I was only cooking for two people I saved half the mixture to try
making some Yorkshire Puddings for lunch. To the pancake mix I added a
pinch of cinnamon and may add mixed herbs to the rest.

I also used soya milk in place of the buttermilk.
