I just tried a new Chinese cookbook with several recipes calling for
Fermented Black Beans (also known as Salted Black Beans). The author
stated that these are really soy beans which have been fermented.

The ingredient list just reads: Black Beans, Salt.

I have some reactions which I think may be due to these, but since I'm
still pretty new at this, I'm not sure about anything!

Does anyone know what they might be fermented with?
