Iam replying late to this, but want to add my two cents. It makes no sense
to see a nutritionist who is not familiar in advance with celiac disease. I
saw such a nutritionist who was supposedly knowledgeable when I was first
re-diagnosed. I had to teach her. Part of me didn't mind, since I knew it
would help others, but the other part was resentful of paying her. It is
worth the research or maybe even some travel to find more of an expert.
This list probably can help you more than a nutritionist unfamiliar with
celiac.
