When my daughters were younger and we were first learning to deal with
the glutenfree diet, my older daughter was also found to be allergic to
eggs and dairy products.  After many years of eggfree/glutenfree/dairyfree
cooking, she appears to have grown out of her egg and dairy allergies.

I remember being bowled over by the chore of finding something to make.
For eggs in baking, I found that l T vegetable oil + l t baking powder
could be substituted for each egg in the original recipe.  This also
works for pancakes.
