My most noticeable response to trace amounts of gluten is a fuzzymindedness
that lasts for several hours. In this state, I have difficulty with thinking
that requires planning and tracking a sequence of activities, and I seem to
have trouble focusing my attention to do any complex analytic reasoning.
There also might be some mild depression, but I generally don't notice this
as an unusual state until it has gone away (and I'm thinking clearly again).
I figured out that this was a gluten response when I realized that it
occurred most often after I had eaten pancakes for breakfast, using flour
from questionable sources. My thinking would clear dramatically some time in
the early afternoon. Since I began grinding my own flour, the problem has
become rare.
As a cognitive psychologist, I would like to see more research done on the
cognitive consequences of celiac disease.
