Regarding the almond flour:
I divide it up into freezer bags and store it in my freezer.
Even my two older, picky eaters (SAD diet, sadly) will eat almond flour muffins.
They are delicious. If there is more than just you in the house, you'd be
surprised at how fast it goes. Having said that, I think you are wise to try
a smaller amount for your first time and/or if your household is small.
