I just made one yesterday..after NEVER having made rice pudding before in
my life. It uses Soy Milk instead of regular milk. It can be found in the
lowfat Moosewood Cookbook. Here's what I remember of it:
4 cups water
3/4 basamati rice
1 quart 1% vanilla soy milk
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon cinammon
1/4 cup raisins
Cook rice in boiling water for five minutes. Let sit five minutes. Drain.
Add remaining ingredients to pot and add drained rice. Cook for 40 minutes
to an hour, depending on desired consistency. Eat cooled or warm.
I'll double check the recipe, but I think this is about everything.
