I think that when You manage by will to do something that is against
the nature - such as starve - and You thereby live up to some group
expectations or pressure, thus doing a kind of capitulation, You
often get euphoria. This is well known in crisis psychology.
I guess that this as well can be involved in other diet changes that
have a certain treshold to come over, such as for example eating raw
animal food.
I myself experienced this when I had decided to change to paleo - I
started out trying to eat totally raw. There was no group expectations
involved, and I soon realized I could not eat everything raw, so the
euphoria soon faded away.
