Does anyone have a good recipe to make 'Pita Bread?'  My celiac son
loves the wheat pita, but am having trouble making gluten free pita that
puffs out in the middle.

Also, I do not like rice, and am having a difficult time finding a bread
(be it machine or oven) recipe that utilizes other flours (tapioca,
arrowroot, etc.).
