Hi Bonnie.
I'm glad you've been doing better. Having said that, I'd like to humbly
suggest that you need more time of being symptom-free before making
assumptions about what's safe.
Rather than fanatacism, I think denial is one of the problems celiacs deal
with - and understandably so. We live in a society that asks "how can that
be?" about any misfortune or tragedy. As a society we want revenge,
retribution, and justice. We can't accept that life isn't fair. But, it
isn't.
So, as hard as is it, until we really know better (and we don't yet) it is
safest to be as close as 100% gluten-free as possible. (BTW, I don't
subscribe to the notion that it's impossible to be 100% GF - but that's
probably another long discussion.)
Everyone has to make their own choices - and I fully support that. But
please understand the risk you are probably subjecting yourself to.
