I've just finished reading Henry J. Cowan's, "The Masterbuilders: A History
of Structural and Enviromental Design from Ancient Egypt to the Nineteenth
Century." (1977,John Wiley & Sons, pub.)

Though it may not be as specific as you need, it does discuss the basic
methodology and design of cut stone.  Plus, it is easy reading.
