hi listmembers,

thanks to all those responding to my question about gf communion bread. I
received 4 answers with a recipe.

here is one of them, the others varied only slightly.

GLUTEN-FREE COMMUNION WAFERS

2 tbsp (25 mL) potato starch flour
1 tsp (5 mL) baking soda
1 cup minus 2 tbsp (220 mL) cornstarch
1 tsp (5 mL) salt
2 cups (500 mL) brown or white rice flour (I used white)
2 tbsp (25 mL) xanthan gum
3 tbsp plus 1 1/2 tsp (52 mL) sugar
Sift the dry ingredients together
1/2 cup (125 m)L butter or margarine
1 cup (250 mL) buttermilk

Cut in butter, add buttermilk and mix with fingers until dough is
workable. Roll with rolling pin on rice flour coated surface as thin as
possible. Cut into small circles. Place on cookie sheet. Bake at 350 F.
(180 c) for 6 minutes. (NOTE: They do not brown.)

PS: there was one recipe I deemed best, though:
1 ounce Love
1 ounce Compassion
1 ounce Tolerance
Mix ingredients until well blended, and serve while warm
