There _are_ a number of brands of Kosher for Passover Gefilte Fish that
do not contain Matzo Meal (they use potato flour as binder).

One of the brands I found last year was "BenZ's Gourmet" Hungarian Style
with Jellied Broth.  Darker and more flavorful than most other store
bought.  I don't think you could tell it was GF, if you didn't know.
