I don't necessarily believe that all yeasts are evil.
Ray and others may disagree.  ("Alcohol is yeast urine"
is what I remember Ray saying in the book.)

I've made hard ciders using a variety of different
yeasts.  The best cider I've ever made was fermented
using the natural yeast on the skin of the apple.
