various kinds of squash also work (with potatoes, etc.) as a creamy base,
though in this country, i've only tried summer squash (esp zucchini).
there's also a kind of winter squash used in hungary for such a dish, but
i've not found it here, and the word only translates as "marrow" (which,
i think, is just british for "squash".)
still, pretty much any squash makes good sauce/soup base --- cf.,
pumpkin soup.
