Not entirely/universally true. For some (me included) the allergy is to the
protein, but not those foods that have been processed to remove most/all of
the proteins. I can eat soy sauce, tamari, soy lecithin, and soy oil
without incident. But if I eat soy beans or tofu, I have a pretty nasty
reaction (respiratory distress). Of course, there are those who are
extremely allergic to even trace amounts, and they should stay away from
all soy products.
