Hi,

I was experimenting the other day and came up with an adequate substitute for
parmesan cheese. My kids miss sprinkling something on their pasta so I thought I
better try and solve this or these easy, nutritious pasta dishes will lose their
appeal.

I started with ground almonds (it looks like parmesan!) and lightly sauted them in
butter and REAL garlic. Added some Mrs.Dash or Spike or whatever salt substitute
you have. Garlic salt might work, since parmesan is salty. Add oregano, basil and
saute until light golden color. Let cool and put into a shaker. It shakes out just
like parmesan! You will ahve to play with the amounts, I started with a cup 3/4
cup of ground almonds.

Bonus here, calcium in almonds, all the good stuff in fresh garlic.
Sub margerine for butter for some people, of course
