If someone has the combination of gluten, milk protein, and soy protein
intolerances, I would highly advise, as a lay person, that they speak
with a specialist before trying to add back milk and soy to the diet.
In a book called Celiac Disease, by Cook, it states that soy protein
intolerance and milk protein intolerance can cause flattening of the
villi of the small intestine in people with Celiac disease (gluten
intolerance).  As the flat villi heal over time, the intolerant person
may be able to tolerate these foods for a while, but eventually, the
villi will become flattened again in the case of gluten intolerance.
Since the villi can become flat in individuals who have Celiac Disease
when ingesting milk protein or soy protein in individuals with these
additional intolerances, it would be like playing with fire to allow
milk or soy back in the diet.  The only way to tell whether damage to
the villi in the small intestine were occuring would be to take blood
tests, or have a biopsy to ensure that damage is not occuring.  Please
remember that Celiac Disease is a considered premalignant condition
according to some specialists.  If a gluten free diet is not adhered to
for these individuals, studies have shown that the risk of intestinal
lymphoma is 1 in 7.  I take this condition seriously, and would not
advise anyone to risk adding back milk or soy if the protein intolerance
occurs in congunction with celiac disease, since these proteins may also
play havoc with the villi.
