You 'dump' some water, you also 'dump' very short chain fatty acids
which
evaporate easily, you also 'dump' some not so very short chain fatty
acids which are mixed with the milk solids that you are going to
discard.
The amount of protein in butter IS trace. If you honestly believe that
this isn't so, then you definitely have a court case on your hands as
butter is labeled 0 protein (which basically means <1g). As I said,
trace amounts, not 0, but not enough to go over '0 gm' mark either.
If you are going to insist that I am still wrong please back it up
with facts.
