Basic seed & nut cheese:
1 c nuts (e.g. cashews, almonds, pecans)
1 c seeds (sunflower, pumpkin)
3/4 - 1 c water
1 tsp veggie stock powder
Blend the nuts and seeds finely in a food processor. Add the water and
stock, blend to give a firm paste.
Combine base well with one of the following seasonings:
sage & onion : add 2 spring onions or a little minced red onion, 6
sage leaves (or 1 tsp dried) and 2 tbsp wine.
garlic & herb: Add 2 tbsp mixed fresh herbs (or 2 tsp dried), 1 clove
of garlic, and the juice of half a lemon
nutmeg: Add 1/2 tsp nutmeg & 1 tsp tahini.
curry: Add 1 tsp curry powder and a squeeze of lemon juice.
caraway: add 2 tsp toasted seeds.
Turn the mixture into dishes and leave covered with a tea towel for
several hours. Refrigerate and use to spread on veggies and fruit
slices, or thinly on crackers.
