Fermentation may also affect proteins. What you are sharing is another
example of "bad dairy news" that doesn't specifically deal with fermented
dairy. IMO the ca/mg ratio imbalance argument probably carries more weight
than the ones you mentioned...

I own this book and am surprised Cordain would use it as a reference.
Though the author is very credentialed, the book isn't specifically
referenced (and most of those listed from the 1970's). It is a 70 some page
essay supporting an anti-dairy stance. VERY refreshing from a pediatric
administrator! But not exactly peer-reviewed stuff.
