I am not shure about venison, but elk has a kind of bitter smell, sometimes
somewhat sour smell, especially noticeable when drying it. And it is
nothing wrong with it. Also the taste is sometimes a little bitter. I think
it has to do with the time of the year (wild game), and if the meat has
been frozen or not, but I am not shure. It is always ok to eat.

This is the way I eat it, unless I eat it as jerky.
I think You can use any fat, after taste. I also mix in some herb seasoning.
