Where do you get these frozen suet thingies?

We buy the 1 pound plastic pouches of frozen suet that my wife renders
for pemmican.

Is using the suet as it comes out of the pouch and grinding it up with
sirloin steak to make juicer burgers to grill OK?

(We like to grind our own meat because we like to cook it very rare.)
