Michael,

How about hearts? I think I could stomach those (sorry for that one) better
than kidneys with an ammonia smell! I have seen beef hearts at the Asian
market and would like to try those for my son.  What would be the simplest
way this over worked cook could make those??<grin>

Also, is anyone interested in a source for almond flour? You can make
muffins and other breads out of it and it is delicious. Call (209) 883-0403,
Hughson's Nuts, in California, I buy 25 pounds at a time for 85 dollars,
quite a cheap price compared to the  price in a health food store. For
recipes, see BREAKING THE VICIOUS CYCLE book by Elaine Gottschall and adapt
her recipes to paleo. More on that later. I will post some of her recipes
and see how we can adapt them. Most call for butter, many for honey. I leave
out the honey, but what to do for the butter? I put a banana in the muffins
and with my new taste buds from paleo, they taste plenty sweet for me! This
has been a lifesaver for us, kind of like a pemmican type food you can take
with you on the road, not for long periods of time, but say if you are going
to be gone for 3 or 4 hours and you want a snack other than pemmican or
trail mix, it's a nice change.  Also, I find any trail mix that has  dried
fruit in it is too strong for me, too glycemic.

And, to think of how much ice cream I used to put away, with no reaction
(that I was aware of) Now, am sensitive even to dried (and fresh)  fruit!

I saw a woman the other day with some Ultra Slim Fast for her lunch and
thought, there but for Ray, go I! How I used to diet and exercise, I was an
exercise freak and could never lose weight. With this paleo diet, I am never
hungry, don't "have" to exercise to maintain my weight, etc.

Finally, what blood test do I request to get the cholesterol and LDL levels
everyone else is posting? I want to post/evaluate  mine!!! All I know is I
think they said my cholesterol is 168. I'm kind of glad it went up from
below 100, which it was before I was diagnosed with cancer---
