Q for diabetic celiacs

Hi.
We are having a guest for dinner next week who is a celiac diabetic.
The celiac part I can obviously deal with. As I don't wish to make him
feel uncomfortable by making him something different from the rest of
us, I am asking here for suggestions for a dessert. Sugar is obviously
out as is salt. Is natural sugar from  fruit OK? What else besides
fruit salad?

I am doing little better thinking of something to make for the main
course since he can't have garlic or onions either. I can't think of
one dinner recipe I have that doesn't contain one or both of these
ingredients. How do you get your food to taste like anything, or is
this particular to this diabetic? Please e-mail me privately as
responses probably wouldn't interest most of the list and I am not a
subscriber to the diabetes list.
