Curious as it may be, my husband has long had a serious problem with eggs.
Symptoms with it are identical to those when he eats milk or milk
by-products. There seems to be no rhyme or reason as to the why -
gastrologist told him nothing of any benefit - so he makes every possible
effort to refrain from eating them.  I have seen him  actually nearly double
up in pain from eating a couple of scrambled eggs. I'm quite certain it is a
different problem than Lactose Intolerance, but just what it is we surely do
not know. It's been many a year now since he talked with the doctor about it,
so perhaps some new information is available.

He has found that eggs, by themselves are the worst problem causer, as in
scrambled, fried etc. Next is egg based foods such as Mayonnaise etc. Eggs
 that are only a small part of recipes, meatloaf etc. do not seem to bother
him - unless he eats several such items at the same time.

So you would probably do well to find something else with which to bind your
potato salad. I personally know of nothing in "black olives" which is lactose
related, but that doesn't make it so. When I have put them up, I use nothing
detrimental. However, it's possible that big manufacturers use something in
their processing that could be milk derived. That would not have to be listed
on the label, I don't believe. Only that which goes into can itself, I think
has to be listed. There again, might not be correct! <G>

I will never forget how shocked I was to find out that many of the pills we
take have milk in them. My pharmicist, who is not a compounding pharmicist,
did not know that. Milk by-products are hidden in many different ways, in
many different things. It's a problem long suffered by people and one that I
am personally very pleased that people are becoming aware of.
