I have seen the same thing with patients. My interpretation is based on
the notion (Hans Selye) that any disease process is due to a combination
of stressors. Other emotional, chemical, and physical stressors (like
temperature, barometric changes, and other dietary factors) may need to
be present before a small amount of allergen causes noticeable symptoms.
Like the straw that broke the camel's back---it wasn't really only the
last straw that broke the camel's back.

I've seen it many times that a patient reports that orange juice causes
them indigestion. But after they give up the dairy it doesn't anymore.
