Off of the McDonald's Nutrition Facts brochure:
French Fries: Potatoes, partially hydrogenated soybean oil, natural
flavor, dextrose, sodium acid pyrophosphate (to preserve natural color).
Cooked in partially hydrogenated soybean and corn oils, TBHQ (to protect
flavor), citric acid, dimethylpolysiloxane and natural flavor.
Some ambiguous ingredients there, but my husband hasn't had a problem with
the fries.
