Hello, Listmates,
Recently I discovered a cookbook with some very fine recipes, almost all of
which are completely gluten-free; those few that are not could easily be
adapted to be made gluten-free. The cookbook is Jay Solomon's Vegetarian
Rice Cuisine: From Pancakes to Paella (125 Dishes from Around the World).
It is published by Prima Publishing, PO Box 1260BK, Rocklin, CA, 95677;
telephone (916) 632-4400, copyright 1995. I found it at a Borders Books in
Boston, MA; it can also be ordered directly from the publisher. It is a
vegetarian cookbook, but I think even non-vegetarians with CD will like it,
because it offers so many good ideas for one of our basic staple foods. One
dish I plan to make this weekend, now that winter has begun to arrive in
this part of New England, is the recipe for "Maple-Nut Rice Porridge," since
I really like hot cereal during cold weather.
I have no financial interest in this book or publishing company. I was just
very glad to find a cookbook "friendly" to those of us who are committed to
remaining gluten-free.
