Cheese on pizza may have less lactose but it is not necessarily all gone.
The type of cheese affects how much lactose remains. Also it's processing
and cooking. We had a pizzaria around here that used to use 5 different
types of cheeses on its pizza.
The hidden ingredent in pizza that is not always recognized is whey. I
have found that whey is sometimes present in the crust! Milk may be even
in some processed meat toppings.
I discovered this when I was trying to find out why I had much worse reactions
to some "brands" of pizza than others. Now I stick to ordering pizza with
no cheese from restaurants that I know don't have whey or other dairy
products in the crust.
