Is this true?

I had been told previously that kosher sausages were probably GF as
they contain no filler, but gave it little importance after a
Jewish friend said he wasn't so sure.

I accept that kosher food does not specifically exclude wheat or
gluten containing ingredients, but can some of my old pre-diagnosis
favourites be replaced with kosher variants?
