I have a bag of Quinoa flour from Ancient Harvest sitting right in front of
me. In big red letters it states WHEAT FREE-GLUTEN FREE.

We all have been through the experience of making numerous phone calls and
writing letter after letter to companies whose ingredients we question. I,
personally, feel that in doing so I am trusting these companies to know what
they are talking about. If this company states the product is gluten-free I
will trust them. Ingredients change all the time and we have to be aware of
that fact. But how can we cope with this disease and all it involves if we
don't extend some trust in others?

I believe that Quinoa is gluten-free and that a company such as Ancient
Harvest would not label it as such if they were not sure. I will go on using
it in baking.
