If I may, I read nearly 400 clinical laboratory (blood profiles) studies
per week at the Health Center where I teach.  It is interesting to read
lipid profiles on the majority of patients.  Of course my observations
are biased and not controlled for, but they do jive with what is known
to the undergraduate student in biochemistry.  When I see elevated
cholesterol (above 240 mg/dL) with a triglyceride level below 200 mg/dL
I am usually correct in guessing the patient's diet; that being low fat,
high carbohydrate foods.  These patients usually tell me what a
marvelous job they are doing by eating "fat free" cakes and cookies,
which are loaded with sugars for taste.

What we know is that cholesterol is soooooooooooooo essential for life
and health that your body will make it if you don't eat it.  In fact,
approx 80% of the cholesterol in your blood right now your body has made
for itself.  I consult with many young women who have stopped having
periods.  Well, estrogens and progesterones (key female hormones) are
cholesterol based.  Low dietary cholesterol may signal certain brain
centers which shut down female hormone production.  This may be true
even if the body produces its own cholesterol.  This infertility
response may be a survival mechanism to preceived starvation ... don't
make a baby you're starving ... reinforce your own tissues there's
scarcity of meat.
